23rd Episode – Umami
‘Umami’ nowadays is not a simple buzzword.
It is a pleasant savory taste we struggle do define, yet everyone appreciates. It fills the flavor hole and determines the overall impression of the dish, as long as it does not end up tasting the same with the universal base note umami.
We made a good use of characteristic umami packed ingredients and developed each course to accentuate different savory combination. Hardly recognizable, yet everyone knows, umami is defined in our own way.
